Quiche Lorraine Recipe


So I've got some eggs that expire tomorrow and I'm thinking of making several quiches, Quiche Lorraine is a good one since it has bacon in it, but I also have some spinach so might just make a couple of quiches. Below is a recipe for Quiche Lorraine and a web page devoted to quiche were there is no doubt several more quiche recipes.

The most classic of quiche recipes is Quiche Lorraine. The salty smokiness of the bacon is the absolute perfect complement to the creamy tang of the of the Swiss cheese. This is a perfect combination. Any of the quiche crust recipes can be used for this dish, although we prefer the classic crust.

* 1 pre-made pie pastry for a 9 inch single crust pie
* 12 slices bacon
* 1 cup shredded Swiss cheese
* 1/3 cup chopped green onion
* 4 eggs, beaten
* 2 cups light cream
* 3/4 teaspoon salt
* 1/8 teaspoon cayenne pepper
* 1/8 teaspoon ground nutmeg

Directions

1. Preheat oven to 425 degrees Fahrenheit
2. Place bacon in a large skillet, and fry over medium heat until crisp. Drain on paper towels, then chop coarsely. Sprinkle bacon, cheese and onion into pastry shell.
3. In a medium bowl, whisk together eggs, cream, salt, and cayenne pepper. Pour mixture into pastry shell.
4. Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F, and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean. Allow quiche to sit 10 minutes before cutting into wedges.

Strawberry Gelato


I had some gelato for the first time yesterday and to my surprise it tasted just like regular ice cream, I'm not sure what the difference is or why the name is not just regular ice cream but it was good so in honor of new experiences here is a recipe for strawberry gelato and a lucious pic of it.

What you’ll need:
6 egg yolks
1 vanilla bean
1 cup + 2 tbsps of granulated sugar
3 1/2 cups of whole milk
2 - 0.32 oz (9g) packets of vanilla sugar - I use Dr. Oetker Original Vanilla Sugar
1 lb of fresh strawberries - blitzed in your food processor

What to do:
In a large saucepan over low - medium heat, add your milk & vanilla sugar. Stir. With a pairing knife, cut a slit down the the center of your vanilla bean. Carefully scrape out the vanilla seeds with the edge of your knife. Place the whole vanilla bean & seeds into the milk mixture. Continue to stir until milk is warmed completely through. You don’t want to boil the milk mixture. In a mixer, combine the sugar & egg yolks & beat with the paddle attachment until mixture is creamy. Slowly temper the egg mixture with the milk mixture (SLOWLY, you don’t want to end up with scrambled eggs). Once you have combined the mixtures, return combined mixture to sauce pan and continue to stir over low heat until mixture thickens. This could take a few minutes.

Once the mixture thoroughly coats the back of your wooden spoon, it is ready. Remove from heat and move pan into refrigerator to cool completely. This could take a few hours. Just before placing mixture into your ice cream/gelator maker, take your blitzed strawberry mixture and add it. Stir well. Place mixture into your ice cream/gelato maker and follow the instructions per your machine.

Tip: Save your vanilla bean allow it to completely dry out & place it into your sugar canister. It will lightly flavor your sugar with vanilla!
